Spaghetti Aglio Olio
Ingredients:
½ cup extra virgin olive oil
¼ cup onion, chopped
8-10 garlic cloves, chopped
10-12 oz. box spaghetti
½ cup grated Romano cheese
A small handful of chopped parsley
Salt and red pepper flakes to taste and desired heat
A coffee cup... explained later
Directions:
Add the ½ cup olive oil to a 2qt. saucepan and heat on medium-low
Add onion, garlic, and a pinch of salt to the pan. Fry slowly until soft and translucent (about 10 min.), stirring occasionally.
While the garlic and onions fry, bring a 6qt. pot of water to a boil over high heat
After water comes to a boil, add at least 3 tbsp salt (salty like the sea) and then stir. Now, add your spaghetti and reduce heat to medium-high. Cook for about 8 min. or until al dente (slightly firm), stirring occasionally. Make sure you reserve 1½ coffee cups worth of the pasta water before draining your pasta in a colander, as well as the pot you boiled the spaghetti in.
Add the reserved pasta water to the onions and garlic; along with red pepper flakes, a pinch more salt, and the handful of parsley. Stir.
Place the cooked spaghetti back into the pot you boiled it in. Then, pour the mixture of onions and garlic onto the spaghetti and mix well.
Lastly, add the Romano cheese, and a dash more extra virgin olive oil to your taste. Mix lightly and enjoy Monsters! :)
